Executive Chef, Paul Condron maintains a paddock to plate philosophy in the Mangapapa Kitchen as he uses the majority of fruit and vegetables grown on the estate around the hotel. He is inspired by the local produce and the quality of those ingredients and he produces exceptional menus with flair and creativity.
